For years, those apples became sweet cider, preserves, and other small-batch goods. Then, in her 90s, Carol decided to start something new—hard cider. New Salem Cider was added later as a way to expand the use of the orchard’s fruit and support the long-term viability of the farm. Hard cider production began on-site using apples grown primarily on the property.
